Needing a cheap light weight clutch setup for a 2300

use a flywheel from an Escort 1.9l around a 97 is the lighter one. you will need to use the shorter Escort bolts and use a longer throw out bearing.

Do you use stock clutch?

yes. I used the stock clutch for the trans.

It's actually a 91-96 Escort with the 1.9L ... weighs in at a little over 16lbs.

You can use the stock Mustang pressure plate and clutch, and a TOB from a 6 cylinder Chevy truck (Timken p/n 614037). If you have a 23 spline tranny you can save more weight by using the pressure plate from the same Escort, and the disk from a 71-72 Pinto with a 1600cc (with German transmission). For this setup, you'll need the longer TOB that Racer Walsh or Big E sells.

Also, on some T-5 transmissions, that Chevy bearing won't work. It worked on the one I ran, so I don't know where the dividing line is, but quite a few people have said it wouldn't fit on the input shaft. And MAKE SURE you get the flywheel bolts for an Escort ... the Mustang ones will seem to torque down OK, but you're actually torquing onto the shoulder, and they WILL break or back out.
