With all the differant size steering wheels, what's the advantage over say a 15" compared to a 17"?

I run a 15" due to my love for eating also.lol But I just ordered a wheel with the center enclosed because I broke my thumb last week, getting it caught in the wheel in a wreck. I have tweeked my wrist a few times over the years and figured it was time to rectify the problem.

Incorrect.
With a 15 inch wheel a quarter turn requires your hand to move about 11.8 inches.
With a 17 inch wheel a quarter turn requires your hand to move about 13.3 inches.

You have more LEVERAGE with a big wheel but if leverage is a problem your power steering needs to be looked at.

My advice, and experience has always been.... use as wheel as big as your belt line allows.

if a one or two inch deference in a steering wheel is a concern with your belly,..then im sure you having left side % issues as well,...put that gravy biscuit down!!

I use a little wheel but i raced go karts before late models so I like a quicker steering car. Tried the big wheel, made my racecar feel like I was driving a bus and could not use it. Needed to put suiced knob on it maybe.lol
