Getting into late models next year and wondered what wheel offset everyone is running on each corner of the cars....I've had some guys tell me 5" all the way around, just wondered if there were other opinions.

5" all the way around is a good place to start but check with your chassis manufacturer.
If you're just getting into late models you'll quickly find that there are some places you can save money and some places you just can't. Standardizing on a wheel offset will save you some money.

5" all the way then just pick up 2ea 1 inch spacers and 1ea 2 inch spacer you will be good for just about anything.

^--- agreed. Cheaper to buy 10 wheels spacers than 10 wheels, especially if you break one.
