I use a 48 ford truck rim and tire(coke bottle rim), it is a 16 inch rim and gives good ground clearance. I have got by with a 12 wide latemodel wheel, it was snug but fit ok, this is with a wide rf rocket.

Tallest passenger tire you can find (235+/75-15), and a big car gm fwd rim (70's eldorado/rivera/toronado) re drill to a wide 5 pattern.
