Has anyone ever just used a chain on the brake side of the liftbar...our track days its illegal to have a spring and the rubber bumpers don't seem to be very consistent

Chain if fine, and its easier to set pinion angle with a chain, might can add a little rebound to 5th shock, just to slow it down a little.

Chain will work but it will loosen your car considerably under braking.

Depends on how hard you brake (or let the back pressure from the motor "brake") on entry.
The idea of the 6th coil is that it keeps the rear wheels from becoming suddenly unloaded during decel. When it his the chain with no spring, it will unload all at once. This is why someone else mentioned more rebound on your 5th coil. You'll want to SLOW that process down.
Or...you might like it...only one way to find out.
