Fairly new driver switching from twin tube shocks to double adjustable gas canister shocks. What kind of difference will I notice? And will I need to change anything about driving style?

what brand are you switching to? from a design standpoint, a mono tube shock with remote canister will react quicker and generally have more stability, so it may feel a bit stiffer. In the end it all depends on what the build is inside the shock.

Going from factory AFCO's to Ohlins built by SHY for Black Front Rocket.

You are going to be a lot better. Just set the car up and drive it! It should maintain traction better on slick surfaces that are not smooth.

My first night with my new Penske's, I thought it was the smoothest track we ran all year. That is until I got in the pits and heard everyone saying they hadn't seen a track that rough ina long time. I was on off-the-shelf afcos before. No more fall off, and I can drive the car way harder than before.
