Just curious, do most of you guys and gals care about your cross weight and just sit your bite? or really worry about cross weight

I haven't paid attentions to cross in years. Just set the bite and don't even pay attention to cross.

Confused?

Only the LR bite. I do pay attention to the front splits too. I like having the LF heavier than the RF

Set left side and rear %, set LR bite. Cross will be whatever it comes out to be

Cross weight is really the important number but LR bite is easier to calculate (going back to grain scale days) so that is what chassis manufacturers give you. A given cross weight number (say 50%) requires more LR bite as the total weight of the car increases. Just for example and easy math:
A 2000 pound race car with 55% left, 55% rear, and 50% cross looks like this:
500 400
600 500
LR bite = 100

But a 4000 pound race car with the same weight distribution (theoretically same handling characteristics) ends up with twice the bite:
1000 800
1200 1000
LR bite = 200 but the left, rear, and cross percentages are the same.

Hope I made my point.
