are the after market steering boxes lighter than the factory stock boxes

700 series saginaw boxes are 3-5 pounds lighter than the 600 series Saginaw boxes. but all the aftermarket companies I would assume are using a stock GM box, just rebuilding it with new guts and new gears.
you can always buy one that has been cnc lightened.

What's the steering wheel movement lock to lock on the fast steer box (8:1) maybe fastest ratio. Quickner needed still?

depends on how fast you want it
the shorter the steering arm on spindle is say Mustang II most do an 8:1
if using a GM Metric length arm most do the 6:1
arm length on steering box and idler arm have an effect as well.

what models have the 700 series boxes?

Not sure what years and models, but I would assume starting around 2000 model years 2500 and 3500 4x4's
My 09 2500HD Duramax has one that looks like the 700 series.
