it's very very common to need to lift the LR up some to get a jack under it. Many cars need to be lifted before they leave their pit to get over the pit lifts and they are way shorter then a Jack

Then you aren’t looking. The jack must be under the underslung bar and forward of the rear end. Cars must be lifted to achieve this. Many times they jack then up a little and let the jack back down keeping the car up on the LR shock to provide the clearance to get into position. But either way no amount of lifting or jacking up effects the droop. Once the rear end is hanging and the limiter is tight with both tires up to zero friction - the measurement is not effected.
