Freelance payment methods for beginners

I'm trying to figure out how to actually get paid for freelance work and honestly it is overwhelming. What do most Pinoy freelancers use to receive money from clients in the US or Europe without getting killed by fees and bad exchange rates? Is Wise really the best option or does Payoneer or PayPal make more sense for certain situations? And how do you move that money to a local bank account like BPI or UnionBank without extra charges or delays? Also, do you really have to register with BIR and pay taxes even if you are just doing small gigs on the side?
