How much is acceptable minimum at ride height? It’s 8” yoke so 6” of barrell.

RH isn't the worry, it's on the gas and the rear axle in full wrap where the yoke is fully inserted.
Jack up the rear end to simulate what it's doing at race speeds and look for 3/4"-1' before bottoming out in the tail shaft and at least 2" of spline engagement at full extension. That's prolly gonna be off the gas/on the brake and the lift bar tight.
