Just curious as to what kind of problems would you have if you went from a 18.25 rack to a 19.25 rack, or can it even be done?

The distance between the lower control arm mounts directly coincide with the width of the rack. If you have a car with a wide RF option, with two RF lower mounting holes, it would need to be in the outer hole with the wider rack. Just switching rack width and leaving the control arms in the original position would cause bump steer issues, at a minimum.
