The usual shock for the 5th coil is a 73-5 valving, what happens if you just use a regular 75 shock?? How would the car react to the stiffer valving on compression?

bleed will be a factor of coarse,but generaly it will be stiffer on the compression side so in the mud she will react faster when you hit the gas (more traction quicker),in the slick it may shock the tires and lose traction,it may work close to the same if you took some sping out maybe 25-50lbs but we have always had a 3 valve on the compression side,so i really dont have a great answer for ya,but you dont know if ya dont try it
