I would have the machine shop cut the caps with a cap grinder then fit the caps to the block by milling the outer step. When the center 2 bolts are tight there should be between .002 and .004 between the block and outer main cap step.
I agree unless you are experienced with installing these caps have a machine shop that has experience installing them and use a milling machine to drill the splayed bolt holes not the junk drill guide that comes with the caps.
