I almost forgot bout my trip to southern Mississippi with my neighbor! kinda suck cause the terms we went down there on but still was a decent lil trip! any how we was going one of his friends or something! and I stated I was thirsty! so went to stop at this little gas station! turn out to be its a lil restaurant now! Bluesville to be exact! best pulled pork and double baked potato salad I have ever had!! wish we had something like around the central Illinois area!
Spare ribs trimmed to a St. Louis cut are more tender and flavorful than are the baby backs............and much more forgiving on the grill.
If they are falling off the bone , they are overlooked...........perfect ribs should be tender and you should be able to take a bite and the bite mark be seen on the rib.
There is a very fine line between perfect and overcooked.....

Down with you 100% on the back strap...........want to try something cool, soak them biches in a can of doctor pepper overnight.......then kosher salt and course ground pepper them prior or hitting the charcoal grill.

The best I ever had, was cut up into 2" cubes, marinated in Dales for about 2 hrs, then cooked medium over charcoal.......make a bulldog jump off a gut wagon!
btw....the beef brisket today at Southern soul was off the chain. They give you 3 slices of 1/4' thick, plus about 6 oz cubed burnt ends. The burnt ends aren't burnt at all and are as tender as butter. It didn't need any sauce, but they have a hot tomato based to die for. Check it out next time you go to GIS!
